- Preheat oven to 350°F. Coat a rectangular 3-quart baking dish with nonstick cooking spray. In a large nonstick skillet cook beef, bell pepper and onion over medium-high heat until beef is browned; drain fat. Stir in tomato sauce, tomato paste, 3/4 cup water and taco seasoning; bring to boiling. Reduce heat; simmer, uncovered, 5 minutes or until thickened.
- Reserve 1/2 cup of the cheese. Place 5 tortillas in baking dish. Top with half the beef mixture and half the remaining cheese. Repeat with remaining tortillas, beef and cheese. Bake, uncovered, 30 minutes or until bubbly.
- Remove from oven. Sprinkle evenly with corn chips and reserved 1/2 cup cheese. Bake 5 minutes more or until cheese melts. Top with sour cream and green onions (if desired), and serve.
