- In a medium saucepan bring 1 quart salted water to boiling over high heat. Add green beans; cook 2 to 3 minutes or until crisp-tender. With a slotted spoon, transfer green beans to a bowl of ice water. Let cool 3 minutes; drain.
- In a large serving bowl combine green beans with salad greens, cannellini beans, tomatoes, olives and onion. Drizzle with half the dressing; toss to coat. Season with salt and pepper to taste and (if desired) top with Parmesan. Serve with remaining dressing.
