- For the sauce, in a small saucepan combine frozen cherries, dried cherries, sugar, apricots, orange peel and cinnamon. Add cup water; mix well. Bring to boiling; reduce heat to medium-low. Cook 15 to 20 minutes or until mixture thickens, stirring occasionally. Remove orange peel; transfer sauce to a small serving bowl. Set aside until serving time.
- For the chops, preheat oven to 375°F. Wrap 1 bacon slice around each chop; secure the ends with wooden toothpicks. Season with salt and pepper to taste. Brush a large ovenproof skillet with oil; place over medium-high heat until hot. Add chops; cook 4 to 6 minutes per side.
- Place skillet with chops in oven. Bake 15 to 18 minutes or until an instant-read thermometer inserted into the center registers 145°F. Transfer chops to a platter. Cover loosely with foil, and let stand 5 minutes. Serve chops with sauce.
