Ingredients

  • 1 tbsp. canola oil
  • 1 small red cabbage, cored and cut into 2-inch chunks
  • 1 tsp. fresh marjoram leaves
  • 3/4 lb. pollock fillets
  • 1/2 tsp. salt-free garlic?herb seasoning
  • 2 Roma (plum) tomatoes, diced
  • 1/2 cup diced yellow bell pepper

  1. In a large, deep nonstick skillet heat oil over medium heat. Add cabbage and marjoram; cook and stir 2 minutes. Cook, covered, 10 minutes, stirring occasionally.
  2. Place fillets on top of cabbage; sprinkle with garlic?herb seasoning, and season with freshly ground pepper to taste. Add tomatoes and bell pepper. Cover and cook 10 to 15 minutes or until fish flakes easily with a fork. Serve warm.
