- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). In a food processor or blender combine olives, Parmesan, 3 tablespoons of the oil, garlic and 1/2 teaspoon of the pepper; process to desired consistency, stopping once to scrape down sides.
- Sprinkle remaining 1/2 teaspoon pepper on chicken, and season with salt to taste. Drizzle with remaining 2 tablespoons oil. Place chicken on grill. Grill 5 minutes per side or until an instant-read thermometer registers 165°F. Top chicken with olive pesto, and serve.
