Ingredients

  • 2 cans whole-kernel corn, drained
  • 2 medium tomatoes, chopped
  • 2 medium bell peppers, chopped
  • 1 small onion, chopped
  • 1/2 cup light or regular mayonnaise
  • Mixed salad greens (optional)

  1. Combine corn, tomatoes, bell peppers and onion in a large mixing bowl. Add mayonnaise; toss to coat.
  2. Cover and chill 2 to 24 hours. Serve on a bed of salad greens, if desired.
