Ingredients

  • 1 (16-oz.) can whole-berry cranberry sauce
  • 2 tbsp. brown sugar
  • 1 lb. lean ground beef
  • 1 1/2 cups soft breadcrumbs
  • 1 medium onion, chopped
  • 1/2 medium green bell pepper, chopped
  • 1/3 cup milk
  • 1/4 cup egg substitute
  • 1/2 tsp. salt
  • 1/4 tsp. dried parsley flakes
  • 1/8 tsp. dried oregano
  • 1/4 tsp. dried thyme

  1. Preheat oven to 375°F. In a small bowl stir together cranberry sauce and brown sugar; set aside.
  2. In a large bowl combine ground beef, breadcrumbs, onion, bell pepper, milk, egg substitute, salt, parsley, thyme and oregano. In a large shallow baking pan, shape meat mixture into an 8x4x2-inch loaf.
  3. Bake, uncovered, 30 minutes. Spread 1/4 cup of the cranberry mixture on top of loaf. Bake 20 to 30 minutes more or until an instant-read thermometer registers 160°F.
  4. In a small saucepan heat remaining cranberry mixture over low heat until heated through. Serve with meatloaf.
