- Preheat oven to 350Â°F. Rinse chicken and pat dry with paper towels. Season with salt and pepper to taste; set aside.
- Place egg in a shallow dish. In a separate shallow dish combine breadcrumbs, nuts, parsley, and salt and pepper to taste.
- Place 1 chicken breast in egg; turn to coat. Place in breadcrumb mixture; turn to coat evenly on all sides. Place in a baking dish. Repeat with remaining chicken.
- Cover baking dish with foil. Bake 30 minutes. Uncover and bake 15 minutes more or until an instant-read thermometer inserted into the center of the chicken registers 165Â°F.
