- Preheat oven to 425°F. In a shallow dish combine brown sugar, cumin seeds, oregano, ground cumin, thyme, garlic, cayenne, and salt to taste. Cut pork diagonally into slices 3/4-inch thick. Coat slices with seasoning mixture, pressing lightly. Place seasoned pork on broiler pan rack.
- Place poblanos, bell peppers and onions in a bowl; add oil, and toss to coat. Place vegetables on broiler pan with pork. Roast 15 to 20 minutes or until an instant-read thermometer inserted into the pork registers 145°F. Let stand 3 minutes.
- Cut peppers into strips. Sprinkle pork and vegetables with cheese, and serve.
