- In a large bowl combine flour, baking powder, baking soda, orange zest, salt and sugar. Set aside.
- In a separate bowl whisk together milk, orange juice, cottage cheese, butter, egg and vanilla.
- Make a well in the center of the flour mixture; pour the cottage cheese mixture into the well. Stir together gently just until combined (the batter should be lumpy). Do not overmix.
- Coat a nonstick griddle or large nonstick pan with nonstick cooking spray. Place over medium heat. For each pancake, spoon 1/4 cup batter onto griddle. When bubbles appear, flip the pancakes gently and cook until lightly browned. Transfer to a warmed plate. Continue with remaining batter. Drizzle pancakes with maple syrup or honey and serve.
