Four-Cheese and Pepper Pizza

Ingredients

  • 1 (12-oz.) pkg. pizza crust
  • 3 Roma (plum) tomatoes, sliced
  • 1 tbsp. extra virgin olive oil
  • 2 garlic cloves, minced
  • 3/4 cup shredded fontina cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup crumbled feta cheese
  • 1 large green or red bell pepper, seeded and chopped
  • 1 bunch green onions, chopped (1â?3 cup)
  • 8 oz. fresh mozzarella, sliced
  • 2 tbsp. chopped fresh parsley
  • 1 tbsp. chopped fresh basil

  1. Preheat oven to 375°F. Place pizza crust on a baking sheet. Place tomato slices in a shallow dish. In a small bowl combine oil and garlic. Brush on both sides of tomatoes; season with salt and pepper to taste. Set aside.
  2. Sprinkle pizza crust with fontina, Parmesan, feta, bell pepper and green onions. Place mozzarella slices on pizza crust, overlapping the tomato slices. Season with salt and pepper to taste. Leave pizza on baking sheet or place directly on oven rack. Bake 20 minutes. Remove from oven; let stand 5 minutes. Sprinkle with parsley and basil, slice and serve.
