Grilled Corn on the Cob with Roasted Red Pepper Butter

  • 4 ears of fresh sweet corn, shucked
  • 1 stick of butter, softened
  • 1 red bell pepper, roasted

  1. Roast your red pepper over the grill until it is fully charred.
  2. Wrap in film wrap and allow to cool. Remove the char with your hands, and discard seeds and stem.
  3. On a clean surface chop pepper pieces into a fine mince, and mix into the softened butter, and chill
  4. Over a hot grill, grill the corn until tender and slightly charred.
