1 1/2 pounds Boneless, skinless Smart Chicken Breast
2 cups cheddar cheese, grated
1 large fresh tomato, diced
fresh cilantro, chopped
For the Marinade: Whisk together the ingredients in nonmetal container. Add 1 1/2 pounds boneless, skinless Smart Chicken Breast, turning to coat each side. Cover and refrigerate 2 to 4 hours, turning occasionally.
Preparing: Preheat grill to medium-high heat. Coat the hot grill with vegetable oil or spray. Grill chicken 4 to 6 minutes. Remove from grill, cover, and rest for 5 minutes.
Wrap tortillas in foil, and place on hot grate. Heat for about 2 minutes. Slice chicken breast and place on top of warmed tortillas. Serve with lettuce, cheese, tomato, guacamole, sour cream, salsa, and cilantro.
