Directions
- In a large bowl, add lettuce, chickpeas, tomato, cucumber, onion, olives and feta cheese. Set aside.
- In small jar, add olive oil, red wine vinegar, Dijon mustard, oregano, salt and pepper. Replace lid and shake to combine.
- Drizzle dressing over salad and toss to coat. Divide the salad into the four pita breads and garnish with fresh mint-if desired.
