Mediterranean Salad Pitas

Ingredients

  • 2 oz. Pure Green Farms Baby Romaine
  • 1 15oz. can Chickpeas-drained and rinsed
  • 1 Large tomato-diced
  • 1/2 Cucumber-diced
  • 1/2 Red bell pepper-diced
  • 1/2 Red onion-diced
  • 1/2 cup Chopped kalamata olives
  • 1/2 cup Feta cheese crumbles
  • 1/4 cup Extra virgin olive oil
  • 2 Tbsp. Red wine vinegar
  • 1/2 tsp. Dijon mustard
  • 1/2 tsp. Dried oregano
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 4 Pita breads
  • 2 Tbsp. Chopped fresh mint-optional

Directions

  1. In a large bowl, add lettuce, chickpeas, tomato, cucumber, onion, olives and feta cheese. Set aside.
  2. In small jar, add olive oil, red wine vinegar, Dijon mustard, oregano, salt and pepper. Replace lid and shake to combine.
  3. Drizzle dressing over salad and toss to coat. Divide the salad into the four pita breads and garnish with fresh mint-if desired.
