- Heat oil in a large nonstick skillet over medium heat. Add rice; cook, stirring, until rice is golden. Add bell pepper strips and green onions; cook, stirring occasionally, 3 minutes or until peppers are crisp-tender.
- Meanwhile, roll up roast beef slices; cut across roll into slices 3/4-inch thick. Add beef and marinade to rice mixture in skillet. Cook, stirring occasionally, just until heated through.
- Wrap in lettuce leaves, if desired, and serve.
