- Heat grill, preferably charcoal, to medium-high. Grill shucked corn for 7-10 minutes, turning occasionally until cooked through and lightly charred.
- Mix mayonnaise, chile powder, salt, pepper, and lime juice in a small bowl. Set aside.
- Spread mixture on hot corn, and top with cheese and cilantro. Serve immediately.
