- In a small skillet cook bacon over medium-high heat until crisp. Drain on paper towels; set aside.
- In a large pot of salted boiling water cook potatoes and garlic 15 minutes or until tender. Stir in spinach to wilt. Drain potatoes, garlic and spinach; return to pot. Cook over low heat, stirring occasionally, 1 to 2 minutes or until excess moisture evaporates.
- Add cream, butter and cooked bacon to pot. Mash potatoes with a potato masher; season with salt to taste. Cover and keep warm.
- Sprinkle steaks with salt, pepper and minced garlic; drizzle with oil. Heat a heavy grill pan or cast-iron skillet over medium-high heat until slightly smoking. Add steaks; cook 5 to 10 minutes per side (145°F for medium-rare) or to desired doneness. Remove and let stand 5 minutes. Serve over bacon-spinach mashed potatoes.
