Thumbprint Cookies

Try this twist on the traditional jelly filled cookie!

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 stick unsalted butter, room temperature, cut into 1/2 inch sections
  • 3/4 cup creamy peanut butter
  • 3/4 cup granulated sugar (plus 1/4 cup)
  • 1/2 cup brown sugar, packed
  • 1 egg, room temperature, beaten
  • 1 tsp vanilla extract
  • 1/4 cup La Vieja Fabrica Raspberry Fruit Delight
  • 1/2 tsp Baking Soda
  • 1/8 tsp Fine Sea Salt


  1. Preheat oven to 375* F.
  2. Sift together the foour, cocoa powder, baking soda and salt in medium bowl, set aside.
  3. Beat the butter, peanut butter, 3/4 cup of the sugar, and the brown sugar until smooth (about 30 seconds). add the egg and vanilla, mix until blended. Gradually add flour and mix on low until smooth.
  4. Form the dough into balls an roll in remaining sugar, place on baking sheet. Press a hole in the center of each ball and fill with 1 tsp of fruit delight. Bake 11 to 14 minutes, until cookies are cracked.
