- Coat a large Dutch oven with nonstick cooking spray; place over medium heat. Add onion, carrots, celery, garlic and pepper; cook 5 to 7 minutes or until vegetables are tender.
- Add broth, spinach, tomatoes, chickpeas and black beans; bring to boiling. Reduce heat; simmer, covered, 10 minutes. Ladle into soup bowls, top with fresh thyme, if desired, and serve.
