Citrus-Grilled Pork Chops with Grilled Oranges

Ingredients

  • 1 jar orange marmalade
  • 1/3 cup orange juice
  • 1/4 cup olive oil
  • 1 tbsp. white wine vinegar
  • 2 garlic cloves, minced
  • 1 1/2 tsp. salt, divided
  • 1 tsp. pepper, divided
  • 6 bone-in pork chops, 1/4- to 1/2-inch thick
  • 3 large oranges, cut into slices 1/4-inch thick

  1. Place marmalade, orange juice, oil, vinegar, garlic, 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper in a blender; blend until well-combined.
  2. Sprinkle remaining 1 teaspoon salt and 1/2 teaspoon pepper evenly on chops. Place chops and 1/2 cup of the marmalade mixture in a large resealable plastic bag; seal bag and shake to coat. Refrigerate 2 hours.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove chops from marinade; discard marinade. Grill chops, covered, 4 to 5 minutes per side or until no longer pink (160°F).
  4. Place orange slices on grill; grill 1 to 2 minutes per side or until grill marks appear. Serve chops with remaining marmalade mixture and grilled orange slices.
