Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 3 pkgs. cream cheese, softened
  • 3/4 cup sugar
  • 2 tsp. pure vanilla
  • 3 eggs
  • 1 cup fresh red raspberries

  1. Preheat oven to 350°F. In a small bowl stir together cracker crumbs and butter. Press onto the bottom and about 2 inches up the sides of a 9-inch springform pan. Set aside.
  2. In a large mixing bowl and using an electric mixer, beat together cream cheese, sugar and vanilla at medium speed until light and fluffy. Add eggs; beat just until combined.
  3. Pour half the cream cheese mixture into crumb crust. Sprinkle with raspberries. Pour remaining cream cheese mixture on top.
  4. Bake 40 to 45 minutes or until the center is almost set. Remove from oven; let cool. Refrigerate at least 3 hours before serving.
