- Cook rice according to package directions; keep covered and set aside.
- Meanwhile, in a small saucepan cook and stir refried beans over low heat just until heated through; keep covered. In a medium saucepan cook tomatoes and cubed cheese over medium heat about 5 minutes or just until cheese is melted, stirring frequently.
- Place tostada shells on individual plates. Layer with refried beans, sour cream, rice, tomato mixture, lettuce, Cheddar, tomatoes and olives. Serve immediately.
